Red Cabbage Meal

Prep Time 5 mins / Cooking Time 45 mins / Serves 4



Ingredients

  1. 4 large sweet potato or yams (bake these on 425F for 45 mins, turning once)


Braised cabbage mix:

  1. 1 tab of coconut oil

  2. 1 large or 2 medium onions, sliced

  3. 4 cloves of garlic, minced

  4.   small red cabbage, shredded

  5. water

Sauce:

  1. 2 lemons juiced

  2. 2 inch of fresh ginger root (grated)

  3. 2 tab of raw honey

  4. 2 tab of olive oil

Optional: sea salt and pepper










Preparation

  1. 1.Wash, prick and bake the sweet potatoes at 425F until cooked.

  2. 2.In a ceramic skillet, add the coconut oil, medium heat.

  3. 3.Add the sliced onions and garlic, cook until transparent, about 5 mins., add small amounts of water to prevent burning.

  4. 4.Add the sliced cabbage to the onions and garlic, add 1/4 cup of water, stir, place lid on pan, cook for about 20-30 mins. adding water if needed.

  5. 5. Split the cooked sweet potatoes and spoon in the braised red cabbage mix.

  6. 6.Just before serving, make the sauce. Put the 4 ingredients in a small saucepan, at medium-high heat, stir continuously with a wooden spoon until bubbling. Switch down the heat to medium, cook for a further 2 mins, until sauce thickens. Pour over the potato/cabbage mix. Garnish with chopped parsley

TIPS

These sweet potatoes with red cabbage are delicious. Be cautious handling the sweet potatoes out of the oven, as they ooze a sweet, sticky liquid which will burn you. Chopped apples added to the mix  whilst cooking, tastes really good too.


I often make this cabbage mix using green cabbage instead and add dulse flakes to it and lots of pepper.


Brussel sprouts work really well too but I halve them, so they cook quicker, and I add pistachios and chili powder to change things up.
