Raw Nori Rolls

Prep Time 20 mins  / Serves 4



Ingredients

  1. 6 - 8 sheets of raw nori

  2. 1 large carrot sliced julienne style

  3. 1/2 English cucumber, sliced julienne style

  4. 1 red pepper, thinly sliced

  5. 1 bunch of green onions

  6. 1 mango, peeled and thinly sliced

  7. 2 cups of sprouts (any, red clover, alfafa etc

Dipping sauce:

  1. avocado

  2. 1/4 jalapeno

  3. 1 lime, juiced

  4. 1/4 cup of cilantro

  5. 1 medjool date

  6. 1/2 cup of water












Preparation

  1. 1.Prepare all the vegetables and fruit as above

  2. 2.Assemble the rolls by layering the prepared vegetables and fruit across the bottom of the nori sheet.

  3. 3.Gently roll the nori sheet over the vegetables and fruit, away from you, maintaining tension, tuck in any loose vegetables as you go. Keep rolling until you have about 2 inches left, wet the top edges of the nori sheet to help the sheets stick and continue rolling.

  4. 4.Cut into bite sized pieces, most nori sheets are scored with a cutting line.

  5. 5.Blend all the ingredients for the dipping sauce together until smooth and serve.

TIPS

Nori Rolls are actually not too difficult to make and I prefer to hand roll them rather than using a sushi bamboo mat. I’m all about quickness in the kitchen. A very sharp knife is crucial and it has to be damp when cutting the sheets. When I’m super busy, I cut the whole sheet in half and serve, rather than cutting into bite sized pieces.


I use any vegetables that I have,  sometimes lettuce leaves, spinach, sliced cabbage, jicama, zucchini, there are endless combinations. Cauliflower rice works well too, but I find it trickier to work with, but I’m no chef!!  Mango makes a great addition, as well as avocado. Make any combination you like and any plant-based dipping sauce, I use coconut aminos as a soy  sauce replacement.


My local vegetarian restaurant uses quinoa instead of rice for their nori rolls.
