Raw Nori Rolls

Ingredients

• 6 - 8 sheets of raw nori

•1 large carrot sliced julienne style

• 1/2 English cucumber, sliced julienne style

• 1 red pepper, thinly sliced

• 1 bunch of green onions
-
• 1 mango, peeled and thinly sliced

• 2 cups of sprouts (any, red clover, alfafa etc
Dipping sauce:
-
• 1 avocado
-
• 1/4 jalapeno
-
• 1 lime, juiced
-
• 1/4 cup of cilantro
-
•1 medjool date
-
•1/2 cup of water
Preparation

1.Prepare all the vegetables and fruit as above

2.Assemble the rolls by layering the prepared vegetables and fruit across the bottom of the nori sheet.

3.Gently roll the nori sheet over the vegetables and fruit, away from you, maintaining tension, tuck in any loose vegetables as you go. Keep rolling until you have about 2 inches left, wet the top edges of the nori sheet to help the sheets stick and continue rolling.

4.Cut into bite sized pieces, most nori sheets are scored with a cutting line.

5.Blend all the ingredients for the dipping sauce together until smooth and serve.
