Healing Broth

Ingredients

• 2 large or 4 medium-sized carrots chopped

• 1 large sweet potato or yam, cubed

• 2 stalks of celery, roughly chopped

• 1 large or 2 medium onions, sliced

• 1 cup of flat-leaf (Italian) parsley (or curly parsley), finely chopped

• 1 cup of shiitake mushrooms, fresh or dried

• 1 large or 2 medium-sized tomatoes, chopped

• 8 cloves of garlic, minced

• 1 inch of fresh ginger root, keep skin on, chop

• 1 inch of fresh turmeric root, chopped

• 12 cups of water
Optional: Chili peppers or red pepper flakes (I used 1/2 tsp of red pepper flakes)
Preparation
Place all the ingredients in a pot and bring to a gentle boil. Turn heat down to low and allow to simmer for about an hour. Strain and sip for a mineral rich, healing and restorative broth.
