“English-style” Breakfast

Prep Time 10 mins / Cooking Time 10 mins / Serves 4




Ingredients

  1. 1 cup of cherry tomatoes

  2. 1 large sweet potato or yam, cubed

  3. 2 cups of sliced button mushrooms

  4. 1 medium onion, sliced

  5. sliced avocado

  6. 1 cup of sliced zucchini

  7. 8 asparagus stalks, trimmed

  8. 1 tab of coconut oil



Optional: fresh salsa, salt and pepper, fresh parsley



Preparation

Once all the vegetables are cut, put the coconut oil in a ceramic skillet on medium heat and add  the sweet potatoes and onion. Stir until slightly cooked, then add the rest of the vegetables and continue stir frying until tender or as desired. Serve at once with the avocado slices.




 

TIPS

I love a mixture of wonderful, warm vegetables, served with some avocado. You can substitute the sweet potatoes with any regular potatoes, don’t be afraid of potatoes, they contain anti-viral properties and are so versatile.


Asparagus is high in glutathione which is a powerful antioxidant and is full of vitamins A, K and B-complex, along with mineral salts, like selenium, zinc and manganese. Yes, they make your pee smell but don’t be put off by this, it’s a miracle food.
