“English-style” Breakfast

Ingredients

• 1 cup of cherry tomatoes

• 1 large sweet potato or yam, cubed

• 2 cups of sliced button mushrooms

• 1 medium onion, sliced

• sliced avocado

• 1 cup of sliced zucchini

• 8 asparagus stalks, trimmed

• 1 tab of coconut oil
Preparation
Once all the vegetables are cut, put the coconut oil in a ceramic skillet on medium heat and add the sweet potatoes and onion. Stir until slightly cooked, then add the rest of the vegetables and continue stir frying until tender or as desired. Serve at once with the avocado slices.
